Weddings, Cake Mistress-Style

When she was first asked, "Do you make wedding cakes?", the Cake Mistress replied:

"Let me answer that question this way -- it's okay with me if you eat this cake at a wedding! But if you want something with fondant and sitting on posts, I'm not your Cake Mistress."

Cake Buzz has been featured at weddings galore, where good cake is preferred over decorated cake. A simple Cake Buzz cake on an elegant pedestal has stood between many'a kissing couple and their glass-tinkling guests.

If you want decorated cake and the season is right, Barb Krauss of Decorah can supply The Cake Mistress with edible flowers. Fancy!

You'll have to ask the Cake Mistress about the Wedding Cake Rules. (The same rules apply to other large cake orders.)

The Roster of Mouthwatering Delights

Pecan Praline Chocolate Cheese Torte

All iced layer cakes are three 9-inch layers and serve at least 16.  The tortes are flourless and dense, and are baked in 10-inch springform pans, yielding at least 20 rich slices. Some cakes and tortes have fillings and additions which are reflected in the cost.

Cake Buzz layer cakes are also offered in two 10-inch layers, and will serve considerably more, as they may be sliced thinner. Both layer cake options are priced the same because they use the same amount of batter, and I charge by batch of batter.

Chocolate Blackout Cake
This cake started the whole thing for the Cake Mistress. An intense chocolate experience for any chocoholic, this is a dense, deep and moist chocolate cake, beneath a thick ganache.                                                                 $55

White Butter Cake
This dense white cake makes the decadent grade, with full-bodied flavor that doesn’t end. The flip side of blackout cake, The White Butter Cake is its wealthy cousin. Encased in white chocolate icing, it appeases all cravings for traditional white cake, with white chocolate to boot!                           $50
With vanilla buttercream instead of white chocolate icing... $45

Enjoy the real thing as The Cake Mistress makes three layers of this dense, yummy tradition – the only way to improve on the original is to add another layer! Choose between creamy White Chocolate icing, the classic Cake Buzz Cream Cheese icing, or a classic vanilla buttercream. (Hint: White Chocolate Icing adds an unforgettable melt-in-your-mouth experience to this age-old favorite.

Italian Cream Cake
The Cake Mistress has developed her own recipe for this classic. Pecans and coconut are the backdrop for the rich texture of this cake, covered in cream cheese butter icing and sprinkled with more pecans and coconut.         $50

Uncommon Carrot Cake
Uncommon Carrot Cake

Full of hearty homemade fixin’s, this cake get its flavor from the combination of ingredients,
and is the choice of any carrot cake connoisseur. Enjoy it year ‘round, knowing there is plenty to spare when you need to feed a crowd.             $50

The Mary Ann Chocolate Torte

Another excuse to get chocolatey – a little of this decadence goes a lo-ong way. Though based on deep dark chocolate, this torte is creamy and buttery, topped with a thick layer of firm ganache, and resulting in a chocolate reverie. The chocolate is not as intense as the Blackout Cake, but qualifies as dark and captivating.                                                                                                    $50

Dutch Espresso
The smooth freshly-made espresso wraps around the flavor of the Dutch cocoa, with melt-in-your-mouth results. A white chocolate icing encases the layers, and the whole thing is just stupid-good.                                 $55

Dense Mocha Turtle Torte
We add pecans and coffee to our dense, dark torte, then top it with our decadent chocolate ganache. The top is then entwined with generously-sprinkled pecans and drizzled with our homemade gooey caramel. This is first over the finish line for turtle lovers.                                                  $55

Southern Coconut Cake
The Cake Mistress wanted to perfect a real Southern Coconut Cake. The process ended when the right combination came together. Rich, dense coconut cake, coconut custard filling, and good-to-the-last-lick coconut milk icing completes a coconut ambrosia. Dubbed “Death by Coconut”, this cake is a must if you love coconut cake.                            $55, all filled variations
Variation I: Apricot-Lemon Filling
Variation II: Lime Tart Filling and Sweet Lime Cream Cheese Icing or Lime Buttercream Icing
Variation III: No fillings with coconut buttercream ... $50

Mozart Lemon Butter Cake
  The Mozart Lemon Butter Cake
The Mozart Lemon Butter Cake is a symphony of flavors, beginning with three layers of dense lemon white butter cake with a smooth lemon cream filling resting between them, and is covered in a light-but-noticeable lemon butter cream icing. The tart lemon and dense, delicate white butter combination is a classical masterpiece.                                                                      $55

Triple Espresso Torte
This triple-strength delight blends a liqueur-intense espresso flavor with fine dark chocolate, leaving a lighter texture than the Mary Ann Chocolate Torte. A layer of white chocolate cappuccino ganache and a chocolate covered espresso bean make each slice true to its name.                $55

English Toffee Butter Pecan Cake
The Cake Mistress was determined to make a cake with a savory butter pecan base. This one goes double on the butter – twice! First, the pecans are butter-roasted, and then stirred into a rich yellow butter cake. The liquid in the cake is a generous portion of buttermilk, and the butter cream cheese icing holds a bounty of more buttered pecans and chocolate-covered English toffee pieces. The nickname for this cake is “The Mystery Jim Cake”. Jim who? It’s not Mr. Cake Mistress…                                                                               $55

Pale Buttermilk Cake with Lemon Tart Filling and Lemon Buttercream Icing
This white cake is made with buttermilk, enriching the moist flavor even more. The lovely lemon tart filling adds a nugget of flavor, and then the cake is wrapped in crisp lemon buttercream. Pale in appearance, this cake is bold in flavor – an unexpected treat in an unassuming package.         $55
Variation: Lime Tart Filling and Sweet Lime Cream Cheese Icing

Pecan Praline Chocolate Cheese Torte
The Cake Mistress is on a caramel mission, and used some of her family secrets in a new configuration. A crumbly chocolate cookie “crust” layer is topped with chopped pecans, smothered with a layer of The Cake Mistress’ own toffee/caramel. A separate layer of chocolate cheese is prepared and covers the caramel, and an all-out creamy dark ganache is the crowning layer. This cake was nicknamed “She’s Such a Torte!” by on-air radio taste-testers in the Summer of ’06, and has become one of the most popular tortes we make.                                                                                                                    $55

Bittersweet Chocolate Torte
The Cake Mistress brings a deeper, even fuller-bodied chocolate to you with this torte, and warns you in advance of its conversation-stopping decadence. Though creamy like The Mary Ann Chocolate Torte, the Bittersweet Chocolate Torte edges into an intensified chocolate experience. Each tantalizing bite is savored and enjoyed – a commanding way to decorate the end of a fork.   $55

Chocolate Raspberry Torte (Fader Torte)
Scandinavians consider berries the ultimate addition to a dessert choice. Inge, a very special Scandinavian-American, thinks so, too, but her father says he often likes a little mint with his raspberry and chocolate. We have taken our dark chocolate torte and added a raspberry undertone, a Chocolate Raspberry Ganache. If desired, this may be topped with a pretty layer of buttercream made with a hint of organice peppermint leaf and raspberry elixir. Uffda!   $55

Autumn Spices Pumpkin Cake with Brown Sugar Filling and Maple Cream Cheese Icing
Created for harvest and holiday tastes, this choice stands tall with three plump layers of rich autumn-spiced pumpkin cake. The brown sugar filling is a one-of-a-kind fudgey confection that is a treat on its own. Pure maple syrup decorates the flavor of the icing, and the blend of the flavors will bring cravings for this cake at any time of year.                                                           $55

Classic German’s Sweet Chocolate Cake
The cake is a classic, and our dense, moist version embellishes the flavors you look for in this choice. We have developed a Carmel Coconut-Pecan Icing that improves on the original with that added Cake Buzz touch of decadence. We use it to fill the cake and top the cake, but we put a nice layer of ganache around the sides. Why go halfway when we can, literally, go over the top?  $55
